Master Brewer In Fukui Tastes Season's First Sake
The master brewer at an old sake maker in central Japan has tasted this year's very first batch of sake produced using recently harvested rice.
The long-established brewery is the largest in Fukui Prefecture, along the Sea of Japan coast. It began making the sake with locally harvested rice earlier this month.
On Thursday, the brewery hung a "sugidama," or ornamental ball made with cedar leaves, at its entrance to announce the completion of the season's new sake.
The master brewer checked its flavor and aroma.
He said that it goes well with salty dishes, and that he hopes people can enjoy it with seasonal food from the sea and mountains in the prefecture.
The new sake will be available at shops from early November.
